The leaves of this plucky evergreen are staples in the kitchen, but the trees make beautiful potted topiaries. Leaves are dark green and have a waxy coating. Bay Laurel’s dense nature also produces aromatic shrubs that make great (edible) screens in warmer climates. Cool region gardeners may grow bay trees in patio pots and overwinter them indoors.
During the summer months, bay laurel attracts birds by producing small, black fruit the birds just can’t get enough of.
These native Mediterranean trees can grow 12” to 24” a year and up to 15 feet wide when planted outside in zones 8-11 but they tolerate pruning and hedging well. Live by the beach? Bay Laurel is moderately salt and drought tolerant.
